“The Heart of the Matter” is a special opportunity to sample a never before, single-vineyard wine aged in an exclusive-to-Ernest Boutes Couer Puncheon. The Couer staves are seasoned in the “heart” of the stacks with little or no exposure to sun or rain for up to two years. You will not find wines aged in these barrels anywhere else in North America—they are simply not available to any other winery. The large format balances the Couer’s rich and elegant tannins with the Rayhill Vineyard’s incredible expression of Sebastopol Hills Pinot Noir Clones 828 and 777.
